My daughter, Brittany, came up with this recipe in her search for a healthier, low-carb version of a Starbucks mocha frappuccino.
When she made these for us, we didn't add the fluffy whipped cream and chocolate syrup to the top, but you sure could if you wanted to.
Since we're following the Trim Healthy Mama lifestyle plan of eating in our home, this is one of the types of beverages that we can enjoy.
However, I will say that some people may be sensitive to using the combination of xylitol with the instant coffee. Everyone is different in how they handle alternative sweeteners like xylitol or erythritol. Next time, we're going to try it with cold "leftover" coffee from the fridge, and see if that works out for us better. It's fun to experiment with all of the options! Another fun option would be to use a combination of cocoa powder and mesquite powder, something I'd like to try. We've liked mesquite powder in everything we've tried so far, especially if it includes chocolate!
Healthy Low-Carb Frozen Coffee Drink (Single serving)
- 4 tsp. erythritol or sugar-free sweetener of choice
- 1/16 tsp. NuNaturals Pure Stevia Extract Powder
- 1 Tbsp. unsweetened cocoa powder
- 3 oz. water or cold coffee
- 3 Tbsp. organic half and half
- 1/4 tsp. vanilla extract
- 1 cup crushed ice
- tiny pinch or sprinkle of salt
- 1/32 tsp. xanthan gum (for a "creamier" texture)
Mix up dry ingredients. To blender or Magic Bullet, add crushed ice, water, half and half, and vanilla extract. Add dry mix to blender. Blend until smooth.. Pour into glass. Optional: top with stevia-sweetened whipped cream and sugar-free chocolate syrup.
