Turkey (or chicken) Enchiladas
Combine gravy, salsa, sour cream to taste in a very large bowl. Mix well. Spread one spoonful of sauce on bottom of each pan you'll be using (typically, an 8x8" square baking pan will be able to hold 4 enchiladas).
Add chopped turkey and cheese to gravy/salsa sauce in large bowl. Stir well.
Place 1/4 to 1/2 cup of turkey mixture inside each tortilla. Roll up and place seam-side down into baking pan or dish. When pan is filled with enchiladas, spread a couple of spoonfuls of enchilada sauce on top so that the rolled tortillas won't get too crispy when being baked. Sprinkle tops of enchiladas with shredded cheese. Cover pan with foil.
Bake at 350 degrees for 30-35 minutes, until cheese is melted and enchiladas are bubbly.
If freezing pans of enchiladas, cover with two layers of foil, wrap in plastic wrap or plastic bags, and label them with date and baking directions.
To bake enchiladas while still frozen, heat oven to 350 degrees and bake at least one hour; it may take as long as 1.5 hours to completely bake enchiladas until bubbly and hot.
- Approx. 4 cups chopped or shredded turkey
- leftover gravy
- 2-3 jars of salsa
- 2-3 medium containers of sour cream
- shredded cheese
- several packages of tortillas
