Um, these sound awesome! I love peanut butter and think these muffins sound like a great healthy alternative (you know, rather than downing spoonful after spoonful). Stopping by from Trim Healthy Tuesdays :)

So, I made these up and found them to be sort of tasteless...? I made sure not to overcook (actually in my oven only baked them for 12 minutes and they were done) and they still tasted a bit dry. So bummed :-( Followed the recipe to a "t" - in the picture posted they look so moist and delicious but that was not our experience.
Hi, Amanda, You know, I've found over the years that recipe results can really vary depending on how people measure ingredients, how accurate their oven temps are, their elevation, the humidity, and so much more. Even ingredients can vary in taste by brands (peanut butter, coconut oil, stevia extract, flax meal). I'm sorry that this recipe didn't meet your expectations. :( It sure was delicious here at my house! :) I hope you find success with some of my other recipes as you try them.
How many calories are each cupcake?
While I'm not concerned about callers, I would like to know the net carbs per serving. I assume a serving size is 1?
Just made these muffins while I had a dessert craving for sweets of some sort and I agree with Amanda that they came out dry and tasteless. I added chocolate chips to make them more flavourful.
Tammy, I'm not sure how long you've been on a completely no-sugar eating plan, but you will find that most no-sugar baked goods are going to have a different taste and texture than what you've previously experienced using sugar, date sugar, honey, agave, or any other sweetener containing a lot of grams of sugar. Maybe this isn't your situation; I don't know. But when I've made this recipe, they didn't turn out dry or tasteless. However, I've been no-sugar and low carb for 18 months now, so my tastebuds have adjusted to not having sugar-sweetened foods. Please disregard my comment here if you don't eat any form of sugar, either.
You could try adding more salt, less coconut flour, and possibly adding in some peanut flour to get more flavor and less dryness that you experienced. I hope those suggestions help!
I was wondering how many teaspoons 12 shakes of the pure stevia extract is? Also, is it the powder, or a liquid? Thank you! :D Can't wait to make these.
Tanya, my pure stevia extract is a powder, and I have it in a regular (reused) spice jar with the little shaker lid with the holes in it, inside the main lid. I taped up all holes but 3 of them, and I gently shake or tap 12 times to get stevia out for the recipe. You could try 1/16th of a teaspoon or 1/8th of a teaspoon, but I really don't know. I looked online for a conversion but couldn't find anything like that for you. You'll have to just try some, taste the batter to see if it's sweet enough, and give it a try. Sorry that I couldn't help more with this!

These look great. I am confused about the shakes of Stevia. The recipe says 12 shakes of Stevia and the directions say shakes of additional sweetener (not stevia). Thank you.

I made these today, they are sooooo good. A real keeper, it said peanut flour, I used almond. Followed the recipe to a tee. Hubby loves them too.

Yum, these are super good! I used sugar free vanilla syrup instead of the almond milk and used two tablespoons of granulated stevia blend for the sweetener. Next time-and there will be one, I will start checking them at 10 mins. I baked them for 13 and that was too long - but they were still fabulous! Great quick and portable snack, Thanks for sharing your recipe!
