Recipe updated September 2014!

I received a few comments from people who had made my original recipe and felt it was dry and tasteless.  Ack!  Who wants that?  ☺

Now that I've been making Trim Healthy Mama style foods for another year, I've learned a lot.  So...I've updated the recipe for you, and I think you'll enJOY it a lot more this time around!

Low-Carb Peanut Butter Cookie Muffins

  • 4 eggs, lightly beaten
  • 1/4 cup melted butter
  • 1/3 cup almond milk or light coconut milk
  • 2 tsp. vanilla
  • 1/2 cup natural "no sugar added" peanut butter
  • 1/2 cup golden flax meal
  • 1/4 cup coconut flour
  • 2 Tbsp. THM Sweet Blend or 1/2 cup Swerve Sweetener/Truvia/erythritol/xylitol
  • 3/4 cup peanut flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 12 shakes (3 tiny holes opened in shaker) of pure stevia extract, or to taste

Heat oven to 375° F.  Lightly grease 12 muffin tins with coconut oil or butter.  In a mixing bowl, combine eggs, melted butter, almond or coconut milk, vanilla, and peanut butter (or other nut butter); mix until smooth.  Add golden flax meal, coconut flour, sweeteners (THM Sweet Blend or Swerve or Truvia/erythritol/xylitol), peanut flour, baking powder, salt, and stevia.  Blend until batter contains no lumps.  Divide batter between 12 muffin cups.  Sprinkle the tops of the muffins with additional sweetener (not stevia), if desired.  Bake muffins for 14-17  minutes or until golden brown around the edges.  Cool in pan slightly; remove to serving plate.  If desired, split muffins in half and spread halves with a small pat of butter.  Makes 12 very filling, regular-sized muffins.

(Most people will only be able to eat 1-2 with a meal.  For Trim Healthy Mama followers, stick to one muffin.  This is an S snack or meal.)
Recipe updated September 2014!

I enJOY the yummy, peanut buttery goodness of a warm peanut butter cookie!  Why not make a muffin with these delicious tastes all wrapped together in a delicious snack or a warm breakfast treat?

These are very low-carb, and packed with protein, so you'll be glad you had one of these instead of a donut.  I guarantee it!  :)  Here's the recipe:

Um, these sound awesome! I love peanut butter and think these muffins sound like a great healthy alternative (you know, rather than downing spoonful after spoonful). Stopping by from Trim Healthy Tuesdays :)

Thanks for stopping by, Amy! Yeah, spoonful after spoonful of peanut butter could be downright dangerous!

Stick to ONE MUFFIN? Are you kidding me? Girl - one muffin and one cookie? Yeah, right. You must have the willpower of....well, of someone with a lot of willpower.
Thanks for linking at Trim Healthy Tuesday....I gotta make these soon!!

Kim, feel free to try those types of flours - but I can't guarantee that the texture of the muffins will be the same. Let us know how they turn out!

So, I made these up and found them to be sort of tasteless...? I made sure not to overcook (actually in my oven only baked them for 12 minutes and they were done) and they still tasted a bit dry. So bummed :-( Followed the recipe to a "t" - in the picture posted they look so moist and delicious but that was not our experience.

Hi, Amanda, You know, I've found over the years that recipe results can really vary depending on how people measure ingredients, how accurate their oven temps are, their elevation, the humidity, and so much more. Even ingredients can vary in taste by brands (peanut butter, coconut oil, stevia extract, flax meal). I'm sorry that this recipe didn't meet your expectations. :( It sure was delicious here at my house! :) I hope you find success with some of my other recipes as you try them.

How many calories are each cupcake?

Paula, I haven't done an analysis of the calorie count since I don't have a tendency to count calories with the eating plan we're on. Feel free to copy/paste the list of ingredients into a calorie-counting online option and figure that out. :)

While I'm not concerned about callers, I would like to know the net carbs per serving. I assume a serving size is 1?

Each muffin contains 2 net carbs. :)

Just made these muffins while I had a dessert craving for sweets of some sort and I agree with Amanda that they came out dry and tasteless. I added chocolate chips to make them more flavourful.

Tammy, I'm not sure how long you've been on a completely no-sugar eating plan, but you will find that most no-sugar baked goods are going to have a different taste and texture than what you've previously experienced using sugar, date sugar, honey, agave, or any other sweetener containing a lot of grams of sugar. Maybe this isn't your situation; I don't know. But when I've made this recipe, they didn't turn out dry or tasteless. However, I've been no-sugar and low carb for 18 months now, so my tastebuds have adjusted to not having sugar-sweetened foods. Please disregard my comment here if you don't eat any form of sugar, either.

You could try adding more salt, less coconut flour, and possibly adding in some peanut flour to get more flavor and less dryness that you experienced. I hope those suggestions help!

I was wondering how many teaspoons 12 shakes of the pure stevia extract is? Also, is it the powder, or a liquid? Thank you! :D Can't wait to make these.

Tanya, my pure stevia extract is a powder, and I have it in a regular (reused) spice jar with the little shaker lid with the holes in it, inside the main lid. I taped up all holes but 3 of them, and I gently shake or tap 12 times to get stevia out for the recipe. You could try 1/16th of a teaspoon or 1/8th of a teaspoon, but I really don't know. I looked online for a conversion but couldn't find anything like that for you. You'll have to just try some, taste the batter to see if it's sweet enough, and give it a try. Sorry that I couldn't help more with this!

Jessica, I'm so sorry I didn't see this message sooner. :( You could probably add another 1/4 cup xylitol, but you might need to experiment with it to see if it becomes sweet enough or if the texture is changed.

These look great. I am confused about the shakes of Stevia. The recipe says 12 shakes of Stevia and the directions say shakes of additional sweetener (not stevia). Thank you.

Do theses freeze well? Has anyone tried to freeze them?

Hi!
These sound fantastic. My son is currently serving in Korea and is asking for healthier goodies from home. Do you know if these are okay to ship overseas? It usually takes 7 days to reach him.
Thank you for your recipe and time.

I made these today, they are sooooo good. A real keeper, it said peanut flour, I used almond. Followed the recipe to a tee. Hubby loves them too.

Yum, these are super good! I used sugar free vanilla syrup instead of the almond milk and used two tablespoons of granulated stevia blend for the sweetener. Next time-and there will be one, I will start checking them at 10 mins. I baked them for 13 and that was too long - but they were still fabulous! Great quick and portable snack, Thanks for sharing your recipe!
