Although I've never been able to attend a formal tea, I've always wanted to! This oh-so-lemony "Mock Starbucks" Lemon Cake is everything I'd imagine a fancy tea cake would be...yet it's quick and easy enough to make for one person in just a few minutes. I'm blessed to be a part of a Facebook group for families who are losing weight and becoming healthier using the Trim Healthy Mama book. Vanesa Stenberg, a member of that online support group, enjoys Starbucks' Lemon Cake, so she set out to find a healthier option to make this luscious treat. Vanesa is allowing me to share her new recipe with you, and now you can have some lemon deliciousness for your own healthy, low carb, no sugar dessert or snack! Find more of Vanesa's low-carb recipes on her Pinterest site. I'm sharing with you her original "single serving" recipe - YUM! Since there are four of us in my family, though, it's easier to make this in a larger quantity for the four of us, instead of measuring out each ingredient four different times into four different bowls. If you'd like to make Lemon Cake that feeds more than one person, you'll find a four-person recipe, below, as well as a free printable PDF file/page that will easily fit into your 3-ring recipe binder. Single serving in a bowl or mug:
Serve 4 at once!
In a microwave-safe or oven-safe bowl (at least 40 oz.), combine all dry ingredients. Add lemon juice, lemon essential (optional), melted coconut oil, warm water, vanilla, and egg. Stir until well mixed. Bake in microwave for 2-5 minutes, or bake at 350 degrees F for 20-45 minutes until no longer moist on top. (I haven't personally baked the 4-serving size in the oven yet, so hopefully I'm not way off on the time. Check lemon cake several times while baking; bake until top is set and firm. You may also bake this in an 8x8 greased baking pan, although your baking times may vary.) While cake is still hot, spread with Lemon Frosting. For additional flare and flavor, you may sprinkle frosted cake with 1 tsp. lemon zest. Single serving:
Frosting for 4:
Combine all ingredients and whisk until smooth, or use hand mixer to blend. Adjust sweetener and lemon essential oil to taste. Spread onto hot Lemon Cake. EnJOY! Mag, I don't know if you've read Trim Healthy Mama yet, but if you do, you'll see the explanation of how lots of women have lost weight eating like this. Of course, this recipe - and other higher calorie foods - aren't eaten every day, all the time, but with Trim Healthy Mama, this is an acceptable dessert option. :)

Made this for a quick breakfast before school this morning. My nine year old daughter liked it a lot! I could eat this at least 3 times a week and be a happy camper! Thanks so much!

I made this in the four person serving and baked it. It took exactly 30 min in a 9X6 glass pan. My eggs separated and sunk to the bottom and the rest floated to the top. It tasted wonderful, kind of like a custard on the bottom, but I don't know why it separated. Any ideas?

Can I use all almond flour instead of half coconut and half almond... really dislike coconut. Looks great.

Leonie, you could use only almond flour, but with the strong lemon taste, I doubt you would taste any coconut flavor at all. At least, I didn't, and I am very sensitive to what I taste and smell. Coconut flour is used in much different proportions in recipes than almond flour. You could start off trying 1 cup of almond flour in substitution for the 1/4 cup almond flour with 1/4 cup coconut flour. I know that seems odd to use a full cup of almond flour instead of a total of 1/2 cup of almond/coconut flour, but 1/3 cup coconut flour is equal to 1 cup of almond flour, and it really soaks up any liquids in the recipe.

Do not want to use artificial sweeteners, so what about honey? Would that work?

Hi, Sandi, You could use honey as the sweetener, but it would change the texture of the cake, so I couldn't guarantee what it would taste like or what the texture would be like.

This was amazing! I have a lemon cake recipe that I make in the spring and summer (it is my favorite). This wasn't exactly like it, but was so stinkin close. It was so yummy and my four year old LOVED it. Thank you so much for sharing. Oh, and the baby didn't eat his share, so I have a nice snack for tomorrow ;)

This was so amazing!!! It is my favorite thm dessert yet, by far!! Funny, I just realized that this is the same website I get our Latina christiana worksheets from. What a blessing your worksheets have been in our Latin studies!! My sons understand Latin because of those sheets...such a great help while watching the video.
